A step by step guide to making skinny crispy potato chips in your microwave!

I saw this on television and I cannot for the life of me remember where. This is not my original idea. I am not nearly clever enough to come up with something as brilliant as this on my own.

I have a secret. I love potato chips. They're sort of my weakness. Along with wine, dark chocolate, champagne, dirty martinis, oysters... Ok, well you get the idea. I could inhale a bag of these crispy salty treats in one sitting. For real. I kid you not. But I don't. It takes a great deal of restraint but I manage. Sometimes I have better restraint than others. But now, I don't have to. You see I have the answer to making an incredibly flavorful, crispy, mouth wateringly delicious potato chip with just a scant amount of oil. A scant? Well, a couple of brush strokes. That's it. For real.

The image above shows what you need.

  • 1 russet, red, purple or any type of potato you wish.
  • Wax or Parchment paper
  • Sea salt (or any flavored or specialty salt)
  • Olive oil, a scant amount
  • 1 piece of paper toweling
  • 1 microwave-safe dish
  • Mandoline slice

How much oil?
A scant.
You literally paint the wax paper a couple of times. You can even measure how scant that is!
So what to do?

  1. Slice the potato into really thin slices using a mandoline
  2. gently blot the slices to remove excess water
  3. Apply some olive oil to a pastry brush and brush over a piece of wax paper large enough to cover your plate
  4. Place potatoes on the wax paper (You will need to do this in several batches.)
  5. Place in Microwave. On television they said 2-3 minutes depending on your setting. I needed 4 minutes per batch.
  6. When done remove from microwave, sprinkle with sea salt, then set aside to cool and harden.
  7. Try not to pick at the first batch while you finish up... It's hard but try!
  8. Repeat steps 1-6 until the potato is done.

Entire cook time may take close to 10 minutes. So worth every second.

1 medium red potato has 123 calories and a ton of potassium and a scant amount of healthy fat from the olive oil. Try this with a sweet potato for additional nutritional value.
Your mouth and your waistline will thank you!
