Eat the Rainbow :: 10 Mouthwatering Gazpacho Recipes You Simply Must Try
For those of you who have yet to sample this chilled tomato-based treat, Gazpacho is a chilled soup with roots in the Andalusian region of Spain. This soup is widely eaten in Spain and Portugal especially during the hot summers, as it is refreshing and cool. Spanish Gazpacho has a much more orange tone to it, due in part to the inclusion of stale bread that's pureed in as a thickener. There are versions with the bread, and many versions without. Over the years the soup has evolved and seen the inclusion of avocados, beets, corn, parsley, watermelon, grapes, and almonds. Whether these are all truly "gazpacho" is up to the true experts, but I'd say that they are at least cousins, or variants. Whatever you want to call them, these chilled soups are delicious, refreshing, nutritious and perfect for lunch or dinner on a hot summer day.

Strawberry and Basil, a French blog, does use bread in this soup, but the red tomatoes are replaced by meatier, sweeter yellow ones. Yellow squash adds more bright vibrancy. Mango vinegar might be hard to find, perhaps replace with another pale fruit infused vinegar. For the full recipe click here.
Yellow tomatoes and corn make this version from The Endless Meal thick and creamy. With corn in abundance, and so sweet this soup is a perfect way to use some of that fresh summer bounty. Don't think this is a sweet soup, a bit of jalapeno adds a bit of a fiery edge.
Another variation of tomato and corn. This one by What's Cooking Good Looking, adds yellow pepper, cayenne pepper and Champagne vinegar to create a soup that is similar yet quite different.
Green tomatoes, avocados, serrano peppers, lime and cilantro give this Gazpacho a South American taste. Jerry James Stone has the recipe. I might serve this one with homemade tortilla chips!
